Chicken Caesar Salad (Printer-friendly)

Hearty salad featuring grilled chicken, romaine, croutons, creamy dressing, and Parmesan cheese.

# Ingredient List:

→ Salad

01 - 2 large heads romaine lettuce, washed and chopped
02 - 2 grilled chicken breasts, approximately 10.6 oz, sliced
03 - 2 cups croutons, 2.8 oz
04 - 1/2 cup shaved Parmesan cheese, 1.4 oz

→ Caesar Dressing

05 - 1/2 cup mayonnaise, 4 fl oz
06 - 1/4 cup sour cream, 2 fl oz
07 - 2 tablespoons fresh lemon juice
08 - 2 teaspoons Dijon mustard
09 - 2 anchovy fillets, finely minced (optional)
10 - 1 garlic clove, finely minced
11 - 1/4 cup grated Parmesan cheese, 0.9 oz
12 - 1 teaspoon Worcestershire sauce
13 - Salt and freshly ground black pepper, to taste

# Directions:

01 - Preheat a grill or grill pan to medium-high heat. Season chicken breasts with salt and pepper. Grill each side for 6 to 7 minutes until fully cooked. Let rest for 5 minutes before slicing.
02 - In a medium bowl, whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, anchovies (if using), garlic, grated Parmesan, Worcestershire sauce, salt, and pepper until smooth. Adjust seasoning as needed.
03 - In a large salad bowl, combine chopped romaine lettuce with enough Caesar dressing to evenly coat the leaves.
04 - Top dressed lettuce with sliced grilled chicken. Sprinkle croutons and shaved Parmesan cheese over the salad.
05 - Serve immediately, offering extra dressing on the side if desired.

# Expert Tips:

01 -
  • It tastes restaurant-quality but comes together faster than ordering delivery.
  • The homemade dressing is so creamy and garlicky that store-bought bottles feel sad in comparison.
  • Grilled chicken breast stays juicy and tender when you know the small trick of letting it rest.
02 -
  • Letting the grilled chicken rest for those 5 minutes is non-negotiable if you want tender, juicy slices instead of meat that squeezes out liquid all over your salad.
  • The dressing tastes even better after sitting for 30 minutes because the flavors meld together, so make it ahead if you can and your Caesar will taste even more refined.
03 -
  • Dry your romaine thoroughly after washing because water on the leaves dilutes the dressing and makes the whole salad taste watered down instead of punchy.
  • Make the dressing at least 30 minutes before serving so the garlic mellows slightly and all the flavors have time to get to know each other.
